Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast cubed
  • 1 white onion chopped
  • 3 garlic cloves minced
  • 15 ounces white beans drained and rinsed
  • 15 ounces diced tomatoes with basil and garlic
  • 4 cups low-sodium chicken broth
  • 1 cup whole wheat pasta dry
  • 2 cups spinach fresh
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup parmesan cheese grated

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken, cooking until no longer pink.
  • Add onion and garlic, sautéing until softened.
  • Stir in white beans, diced tomatoes, chicken broth, and pasta. Season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 10-12 minutes, until pasta is al dente.
  • Stir in spinach and cook just until wilted. Serve with grated Parmesan on top.
