Ingredients

  • 1 apple cored, and diced into 1/2" pieces
  • 4 celery stalks diced into 1/2" pieces
  • 2 carrots medium, peeled and diced into 1/2" pieces
  • 1/2 cup pecans chopped
  • 1 cup baby spinach leaves fresh, chopped
  • 2 tablespoon mayonnaise
  • 1 tablespoon apple cider vinegar

Instructions

  • Combine all ingredients in a medium mixing bowl
  • Serve immediately, or refrigerate

Notes

Some other optional ingredients include mixed nuts, different crispy fruits like pears, cranberries, raisins, pumpkin seeds, sunflower seeds, blue cheese, goat cheese and more! Feel free to make it your own!
