Combine the apple cider and mustard in the Instant Pot and whisk to combine. Stir in the onion. Season the chicken with salt and place in the cider mix. Seal and set the Instant Pot to Manual with high pressure and set the timer to 20 minutes. Once the time is up, manually release the pressure and carefully remove the lid. Serve chicken hot.
