Instructions
Follow the recipe instructions to prepare the Skinny Ms. Barbecue Sauce (unless you're using store-bought.)
Preheat oven to 400 degrees and line a baking tray.
Toss the cauliflower and potatoes separately with olive oil, salt, and pepper and spread each evenly on one half of the baking tray.
Place the tray in the oven and bake for 15-20 minutes or until the cauliflower is soft and browned. Remove the cauliflower and let the potatoes bake for another 5-10 minutes.
Meanwhile, combine the corn and bean dressing ingredients in a bowl, then toss with corn and bean salsa ingredients. Let chill.
Once the Cauliflower is ready, toss with the Skinny Ms. Barbecue Sauce
In a bowl arrange the potatoes with the BBQ cauliflower, corn and bean salsa, cheese, and avocado
Top with chives and enjoy!
Notes
You only need half of the yield of the Skinny Ms. Barbecue Recipe, so when prepping, half the recipe or save the other cup for another recipe.
