Vegetarian Summer Classic

We even use our very own Clean BBQ sauce recipe to add an extra healthy boost, as well as a plethora of other great ingredients.
Fiber-ful Ingredients
This recipe is full of fiber-rich ingredients like cauliflower, potatoes, sweet corn, and kidney beans. Even though it lacks color, cauliflower is definitely not lacking in nutrients. Packed with fiber and antioxidants, this cruciferous veggie is super versatile and super nutritious! It even supports healthy digestion, immune function, and brain health. Potatoes and corn are starches that contain both soluble and insoluble fiber, supporting a healthy cardiovascular system and regular digestion. Red kidney beans also contain insoluble fiber as well as protein, which gives you long-lasting fullness and supports muscle growth.
Skinny Ms. Barbecue Sauce
As we mentioned above, we used our very own clean barbecue sauce for this recipe to give you a simple and healthy alternative to the usual. It not only offers great flavor, but it has a ton of healthy nutrients, as well! Made with 100% clean ingredients, our BBQ sauce delivers the right amount of delicious flavor and spice to this dish. Of course, you can use store bought sauce if you’re in a pinch!
Make Our Vegetarian Summer Favorite
This recipe has a few moving parts including the BBQ cauliflower, roasted potatoes, and corn & bean salsa, however, we’ve kept it as simple as possible for you to whip up this delicious bowl.
First, prepare the Skinny Ms. Barbecue Sauce for the BBQ cauliflower. You can either make this ahead of time or begin this and start everything else while it is simmering. Keep in mind, you will only need half of the yield of the Barbecue Sauce recipe so either halve the recipe or save the other cup for another time.
Once you’re ready for your bowl, preheat the oven to 400 degrees and line a baking tray. Then, toss the cauliflower and potatoes with olive oil, salt, and pepper and spread evenly on the baking tray. Place the tray in the oven and bake for 15-20 minutes or until the cauliflower is soft and browned. Remove the cauliflower and let the potatoes bake for another 5-10 minutes.
Meanwhile, combine the corn and bean salsa ingredients in a bowl and chill. Once the cauliflower is ready, grab another bowl and toss the cauliflower in the BBQ sauce.
Arrange the potatoes with the BBQ cauliflower, corn and bean salsa, cheese, and light sour cream in your serving bowls. Top with chives and enjoy!
BBQ Cauliflower Bowl
Ingredients
- 1 cup Skinny Ms Barbecue Sauce or your favorite store bought brand
- 1 head cauliflower
- 1 pound potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1/2 cup low fat cheddar cheese shredded
- 1 avocado diced
- 1/4 cup chives chopped
Salsa Dressing
- 3 tablespoons apple cider vinegar
- 1 teaspoon honey
- 1 tablespoon lemon juice
- Dash sea salt and black pepper
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
Corn & Bean Salsa
- 13.5 ounces red kidney beans canned, drained and rinsed
- 13.5 ounces sweet corn canned in water, drained and rinsed
- 1 red onion chopped finely
- 1 tomato diced
- 1 red bell pepper diced
Instructions
- Follow the recipe instructions to prepare the Skinny Ms. Barbecue Sauce (unless you're using store-bought.)
- Preheat oven to 400 degrees and line a baking tray.
- Toss the cauliflower and potatoes separately with olive oil, salt, and pepper and spread each evenly on one half of the baking tray.
- Place the tray in the oven and bake for 15-20 minutes or until the cauliflower is soft and browned. Remove the cauliflower and let the potatoes bake for another 5-10 minutes.
- Meanwhile, combine the corn and bean dressing ingredients in a bowl, then toss with corn and bean salsa ingredients. Let chill.
- Once the Cauliflower is ready, toss with the Skinny Ms. Barbecue Sauce
- In a bowl arrange the potatoes with the BBQ cauliflower, corn and bean salsa, cheese, and avocado
- Top with chives and enjoy!
