Crispy Asian Potatoes

Ingredients

  • 1 tablespoon sesame oil
  • 4 garlic cloves minced
  • 1 cup water
  • 3 tablespoon low-sodium soy sauce optional tamari
  • 1 tablespoon Sriracha
  • 1 tablespoon honey
  • 1 tablespoon corn starch
  • 1 pound new potatoes cut into bite size pieces
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onion chopped

Instructions

  • Heat sesame oil in a large skillet over medium-low heat.
  • In a small bowl, whisk together garlic, water, soy sauce, sriracha, honey, and corn starch and set aside.
  • Add bite size potatoes to the skillet, toss to coat with the oil, and cook until just until crispy and golden... being careful not to burn.
  • Pour soy mixture over potatoes and continue to cook until mixture thickens and potatoes are fork tenter. Add additional water if needed, 1 tablespoon at a time.
  • Remove from heat and sprinkle sesame seeds and green onions on top. Enjoy!
