Crostini with Cranberry Fig Jam and Brie

Ingredients

Cranberry Fig Jam

  • ¾ cup frozen cranberries
  • ¼ cup dried figs chopped
  • ½ tablespoon lemon juice fresh
  • 2 tablespoons maple syrup
  • ¼ cup water

Crostini

  • 1 baguette sliced into 20 pieces
  • 2 tablespoons olive oil extra virgin
  • 5 ounces brie cheese
  • 2 tablespoons toasted walnuts chopped

Instructions

  • Preheat oven to 400F. Place the ingredients for the cranberry fig jam in small pot over medium/high heat. Bring to a boil, then quickly reduce the heat to low to simmer. Simmer for about 15 minutes, making sure to smash the cranberries halfway through cooking.
  • Line a baking sheet with parchment paper. Lay the baguette slices flat on the parchment paper and drizzle with the olive oil. Then toss to coat. Bake for 7-10 minutes, or until golden brown.
  • Remove the jam from the pot after cooking, and let it cool for a few minutes. Then divide the brie onto the baguette slices and top with cranberry fig jam and toasted walnuts.
