Ingredients

  • 4 cups low-sodium chicken broth
  • 1 yellow onion chopped
  • 2 carrots diced
  • 2 celery stalks sliced
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 egg beaten
  • 3/4 cup low-fat milk
  • 2 tablespoons unsalted butter melted
  • 2 cups cooked chicken breast shredded
  • 2 tablespoons parsley fresh

Instructions

  • In a large pot, bring chicken broth to a simmer. Add onion, carrots, and celery, cooking until tender.
  • In a bowl, mix flour, baking powder, and salt. Stir in egg, milk, and melted butter until a dough forms.
  • Drop spoonfuls of the dough into the simmering broth. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
  • Add the shredded chicken to the pot and gently stir. Garnish with fresh parsley before serving.
