- 4 cups low-sodium chicken broth
- 1 yellow onion chopped
- 2 carrots diced
- 2 celery stalks sliced
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 egg beaten
- 3/4 cup low-fat milk
- 2 tablespoons unsalted butter melted
- 2 cups cooked chicken breast shredded
- 2 tablespoons parsley fresh
In a large pot, bring chicken broth to a simmer. Add onion, carrots, and celery, cooking until tender.
In a bowl, mix flour, baking powder, and salt. Stir in egg, milk, and melted butter until a dough forms.
Drop spoonfuls of the dough into the simmering broth. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
Add the shredded chicken to the pot and gently stir. Garnish with fresh parsley before serving.
