Ingredients

Salad

  • 1 cup heirloom cherry tomatoes sliced in half
  • 1 heirloom tomato medium, sliced
  • 1/2 cup ricotta cheese part-skim
  • 1 tablespoon thyme fresh

Vinaigrette

  • 3 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon kosher or sea salt
  • 1/8 teaspoon black pepper

Instructions

  • Whisk together ingredients for the vinaigrette.
  • Spread tomatoes and spoonfuls of ricotta cheese on a platter. Sprinkle on fresh thyme and drizzle with vinaigrette.
