Mediterranean Salmon Burger

This flavorful and tender burger is a great alternative to beef patties!

Ingredients

  • 2 pounds boneless skinless salmon cut into small chunks
  • 2 teaspoons dijon mustard
  • 1 tablespoon lowfat mayo
  • 1 tablespoon chives chopped
  • teaspoons coriander ground
  • 1 teaspoon sumac
  • ½ teaspoon black pepper ground
  • 1 teaspoon salt
  • 1 tablespoon avocado oil

Burger Toppings

  • 4 whole wheat buns
  • cup tzatziki
  • ¼ red onion sliced
  • 1 large tomato sliced
  • 1 cup baby arugula

Instructions

  • Place 1/4 of the salmon, along with the dijon mustard and mayo in a food processor. Process until a paste is formed.
  • Add the remaining salmon, chives, coriander, sumac, black pepper, and salt to the food processor. Pulse 4-5 times, just until the ingredients are combined. Chill this mixture in the fridge for 30 minutes.
  • Once the salmon mixture is chilled, remove it from the fridge and shape it into 6 patties. Heat the avocado oil in a pan over medium heat. Cook the burgers for 4-5 minutes on each side.
  • To serve, spread tzatziki on both sides of the bun and layer with red onions, tomatoes, and arugula and the salmon burger.

Notes

Feel free to get creative with the seasonings and herbs. Add cayenne for a little spice. Substitute the chives for parsley.
