No-Bake Lemon Turmeric Energy Bites

Ingredients

  • 24 dates pitted, soaked in warm water for about 5 to 10 minutes
  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 2 tablespoons sunflower seeds unsalted
  • 1 cup pistachios raw
  • 1/3 cup lemon juice fresh
  • 2 teaspoons lemon zest
  • 1/2 teaspoon almond extract
  • 2 teaspoons ground turmeric
  • 1 cup unsweetened coconut shredded

Instructions

  • Combine all ingredients, except coconut, and place in a food processor. Blend until almost smooth (a few chunks is ok).
  • Roll the mixture into 1 inch balls, and then roll the balls in the coconut flakes. Place on a parchment-lined baking sheet. Refrigerate for about 15 minutes before serving. Store, refrigerated, in an airtight container.
