1 1/2poundswild-caught shrimplarge, peeled and deveined
2ears of corncut crosswise into 4 pieces
1yellow onionmedium, cut into quarters
2tomatoeslarge, cut into quarters
1poundbaby red potatoeshalved
2tablespoonsolive oil
1/2cupwater
2tablespoonsparsley leaveschopped
Instructions
Preheat oven to 425 degrees.
Combine garlic, paprika, onion powder, cayenne, oregano, thyme, red pepper, and salt. Mix well and set aside.
Cut turkey sausage into chunks, each about 1 inch long.
Cut four sheets of foil, each about 12 inches long. Divide sausage shrimp, onion, tomatoes, and potatoes into 4 equal portions. Place each portion into the center of each foil piece in a single layer.
Drizzle olive oil and seasoning mix evenly over the top of each packet and gently toss to coat all ingredients. Divide water among the four packets, about 2 tablespoons per pack. Fold the sides of the foil over the shrimp, covering the ingredients completely and securely seal the packets closed.
Place foil packets onto a cookie sheet and bake 15 to 20 minutes or until potatoes are tender. Before opening the packets, carefully cut slits into the packs to allow steam to escape. Carefully open, garnish with parsley and serve.
Notes
Option: Instead of baking, preheat grill to medium-low heat and place closed packets directly on the grate. Close grill and cook for about 15 to 20 minutes.
