Orange Glazed Acorn Squash Rings

Ingredients

  • 2 acorn squash cut into 1 inch rings
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 2 cups orange juice no sugar added
  • 2 teaspoons ground cinnamon
  • 2 tablespoons honey
  • 1/2 teaspoon ground all spice

Instructions

  • Preheat oven to 400 degrees. Spray a baking sheet with non-stick spray.
  • Place the sliced acorn squash rings on the prepared baking sheet. Brush with olive oil and season with salt. Bake for 15 minutes.
  • Remove the squash from the oven and turn over the squash, do this gently. Bake for another 15 minutes.
  • While the squash is baking, combine the remaining ingredients in a small sauce pan. Bring to a boil and reduce to a simmer.
  • Simmer for about 10 to 15 minutes or until the orange juice is reduced by half.
  • Brush the orange juice glaze over the squash. Bake for another 5 to 10 minutes. Serve hot.
