Mash the ripe banana until you've achieved a creamy, pudding-like consistency.
Stir in the eggs until eggs are totally combined with the mashed banana.
As an option, add cinnamon for flavor, and/or a dash of salt and baking powder for fluffier pancakes.
Heat a griddle or nonstick frying pan with coconut oil, and drop about 2 tablespoons of batter onto the pan, separating each drop of batter by a couple inches.
Cook for 1 minute, or until edges start to crisp a little. Sprinkle in any additional toppings of your choice (berries, nuts, semi-sweet chocolate chips, etc)
Flip pancake and cook for another minute or so, until edges are crisp and both sides are evenly browned.
Serve with toppings of your choice.
Notes
Feel free to add whatever toppings you'd like in your pancakes. Nuts, berries, or even semi-sweet chocolate chips make great options. For a sweet finish, top with fresh or frozen berries, or enjoy with warm maple syrup.
