Ingredients

  • 1 tablespoon coconut oil
  • 1 very ripe banana
  • 2 large eggs lightly beaten
  • 1 teaspoon ground cinnamon (optional)

Instructions

  • Mash the ripe banana until you've achieved a creamy, pudding-like consistency.
  • Stir in the eggs until eggs are totally combined with the mashed banana.
  • As an option, add cinnamon for flavor, and/or a dash of salt and baking powder for fluffier pancakes.
  • Heat a griddle or nonstick frying pan with coconut oil, and drop about 2 tablespoons of batter onto the pan, separating each drop of batter by a couple inches.
  • Cook for 1 minute, or until edges start to crisp a little. Sprinkle in any additional toppings of your choice (berries, nuts, semi-sweet chocolate chips, etc)
  • Flip pancake and cook for another minute or so, until edges are crisp and both sides are evenly browned.
  • Serve with toppings of your choice.

Notes

Feel free to add whatever toppings you'd like in your pancakes. Nuts, berries, or even semi-sweet chocolate chips make great options. For a sweet finish, top with fresh or frozen berries, or enjoy with warm maple syrup.

  1. These calories cannot be right. There are at least 70 calories in one egg and 100 calories in one banana, meaning this recipe has at least 240 calories, not 89?!

    1. Lacy, I recalculated the calories and there are 89 calories per serving. There are four servings for the entire recipe.

  2. Hi I was wondering how well these work for meal prep, I would like to make them for the week and keep them in my fridge to reheat, would that work?

    1. Yvonne, That should work. You can even freeze them by placing parchment paper between each one and freezing in a freezer safe ziplock.

  3. I tried this recipe and it didn’t work for me, lol. Maybe bc I didn’t wait long enough and rushed it. It’s still good even though it looks like normal eggs, it has a nice banana flavor to it.4 stars
