Ingredients

  • 2/3 cup pecans chopped
  • 2 teaspoons rosemary dried
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • 16 ounces chicken breast 4 boneless, skinless, fillets

Instructions

  • Preheat the oven to 400 degrees Fahrenheit and line a baking tray or dish with parchment paper or foil.
  • In a shallow dish or plate, combine the chopped pecans, rosemary, salt, and pepper.
  • In a separate dish or plate, beat 1 egg and 1 tablespoon of mustard.
  • Dip each chicken fillet into the egg mixture first, covering completely, and then into the pecans. Lightly press the pecan coating onto the fillet to make sure it sticks.
  • Once coated, arrange the fillets on the prepared baking tray or dish and bake for about 15-20 minutes (or until the internal temparture reaches 165 degrees Fahrenheit).
