Finish it off with a fig vinaigrette or balsamic dressing and you’ve got yourself a mouthwatering meal!
Nutty Pecan Crust

The pecan crust in this dish is made of delicious and savory whole ingredients including chopped pecans, rosemary, salt and pepper, eggs, and Dijon mustard. Yep, you read that right! This recipe is low-carb and gluten-free! Not only is this dish perfect for those with special diets, it is also packed with omega-3 fatty acids. This nutrient is found in pecans and is beneficial for cardiovascular function, as well as skin and hair health. And of course, you’ll get plenty of protein with this pecan crusted chicken, too!
Make this Chicken and Pecan Entree
Cook up this pecan-crusted chicken in less than 30 minutes! Start by preheating your oven to 400 degrees Fahrenheit and lining a rimmed baking tray or dish with parchment paper. In a shallow dish or plate, combine the chopped pecans, rosemary, salt, and pepper. In a separate dish or plate, beat 1 egg and 1 tablespoon of mustard. Then, fully submerge each chicken fillet into the egg mixture before coating both sides in the chopped pecans. Lightly press the pecan coating onto the fillet to make sure it sticks. Once coated, arrange the fillets on the prepared baking tray or dish and bake until it is fully cooked through. Once the chicken reaches an internal temperature of 165 degrees Fahrenheit (about 15-20 minutes) it will be ready to serve!

Ingredients
- 2/3 cup pecans chopped
- 2 teaspoons rosemary dried
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1 tablespoon Dijon mustard
- 16 ounces chicken breast 4 boneless, skinless, fillets
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a baking tray or dish with parchment paper or foil.
- In a shallow dish or plate, combine the chopped pecans, rosemary, salt, and pepper.
- In a separate dish or plate, beat 1 egg and 1 tablespoon of mustard.
- Dip each chicken fillet into the egg mixture first, covering completely, and then into the pecans. Lightly press the pecan coating onto the fillet to make sure it sticks.
- Once coated, arrange the fillets on the prepared baking tray or dish and bake for about 15-20 minutes (or until the internal temparture reaches 165 degrees Fahrenheit).
