1zucchini squashcut into large chunks, optional yellow squash
1red onioncut into large chunks
2cupsgrape or cherry tomatoes
2cupsbutton mushrooms
2tablespoonsolive oil
1teaspoondried basil
1/2teaspoondried oregano
2clovesgarlicminced
1/4teaspoondried ground thyme
Instructions
Preheat oven to 425 degrees. Line a baking sheet with foil and set aside.
On skewers, place one piece of the bell pepper, one piece of zucchini, one piece of red onion, one tomato, and one mushroom. Repeat until the skewer is full. Lay each complete skewer on the baking sheet.
In a small bowl, combine the olive oil, basil, oregano, garlic, and thyme. Brush each skewer with the olive oil mixture on all sides.
Bake the skewers for about 8 minutes. Remove from the oven and turn over. Bake for an additional 5 to 6 minutes. Serve hot.
