Skinny Cottage Cheese Pancakes

These pancakes are super unique and tasty and just the thing for a healthy and scrumptious weekend brunch.

Ingredients

Wet Ingredients

  • 3 eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon vanilla
  • 2 tablespoons honey raw or real maple syrup

Dry Ingredients

  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon kosher or sea salt

To Cook

  • 1 tablespoon coconut oil divided

To Serve

  • 1 banana peeled and sliced or mixed berries
  • 2 tablespoons honey raw or real maple syrup

Instructions

  • Whisk together wet ingredients. In a separate bowl, whisk together dry ingredients.
  • Combine dry and wet and whisk.
  • Place a nonstick skillet or griddle on medium-low heat. Add 1/4 to 1/2 tablespoon coconut oil.
  • Place about 1/4 cup of pancake batter onto griddle with a ladle. Spread in circles with bottom of ladle to form a round pancake.
  • Cook for 2 minutes, or until golden on the bottom, and flip. Place on covered plate to keep warm.
  • Repeat with the remaining batter. Should make about 8 pancakes.
  • Serve topped with fruit and a drizzle of honey or maple syrup. Enjoy!
