To Cook

coconut oil
divided
To Serve

banana
peeled and sliced or mixed berries

honey
raw or real maple syrup
Instructions
Whisk together wet ingredients. In a separate bowl, whisk together dry ingredients.
Combine dry and wet and whisk.
Place a nonstick skillet or griddle on medium-low heat. Add 1/4 to 1/2 tablespoon coconut oil.
Place about 1/4 cup of pancake batter onto griddle with a ladle. Spread in circles with bottom of ladle to form a round pancake.
Cook for 2 minutes, or until golden on the bottom, and flip. Place on covered plate to keep warm.
Repeat with the remaining batter. Should make about 8 pancakes.
Serve topped with fruit and a drizzle of honey or maple syrup. Enjoy!
