Skinny Watermelon Sorbet

- 4 cups watermelon seedless, cut into 1 inch chunks, frozen
- 2 tablespoons lemon juice freshly squeezed, more or less to taste, lime juice optional
- 1/8 teaspoon salt
- honey or maple syrup optional, depending on sweetness of watermelon
- fresh mint leaves for garnish
Spread watermelon cubes out on a baking sheet and freeze for 3-4 hours.
Blend frozen watermelon cubes, lemon juice, and salt in a blender or food processor. If adding honey, do so before blending.
Scoop and enjoy! Garnish with fresh mint leaves if desired.
