Sweet and Sour Green Beans

Ingredients

  • 1 pound fresh green beans ends trimmed
  • 3 slices turkey bacon nitrate-free, chopped
  • 1/2 cup yellow onion diced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon kosher salt

Instructions

  • Bring a large pot of water to a boil. Add green beans and cook for 2 to 3 minutes. Quickly drain and submerge in cold water to stop the beans from continuing to cook. Once cool, drain off all remaining water.
  • In skillet on medium heat, cook chopped bacon. When bacon just begins to brown, add onion and cook until onion is translucent and bacon is crispy. Mix in partially cooked green beans. Continue to cook until beans begin to blister on the outside. Add vinegar, honey, and salt. Toss to coat all ingredients. Remove from heat and serve.
