Ingredients

  • 1 pound sweet cherries pitted and halved (about 3 cups)
  • 1 jalapeno medium, finely chopped
  • 1 cucumber small, peeled and diced
  • 1 bunch parsley coarsely chopped
  • 2 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 lemon juiced

Instructions

  • Combine all of the ingredients in a bowl, and add lemon juice and olive oil. Stir well and serve. This salad will keep in the fridge for a few days, but is better served fresh.
