Baked Tilapia with Spicy Tropical Salsa

Ingredients

  • 4 tilapia filets
  • 2 tablespoons extra virgin olive oil
  • 2 mangos ripe, peeled and diced
  • 1 red onion small, diced
  • 1 tomato medium, seeded and diced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 lime juiced
  • salt and pepper to taste
  • cilantro fresh chopped, for serving

Instructions

  • Preheat oven to 350 degrees F. Season the fish filets with salt and pepper and drizzle with the olive oil. Bake for 8 to 12 minutes, until fish flakes easily with a fork.
  • While the fish is baking, make the salsa by combining the remaining ingredients. Season with salt and pepper.
  • To serve, top the fish with the salsa, Greek yogurt and fresh chopped cilantro.
