Ingredients

  • 1 onion small, diced
  • 3 garlic cloves minced
  • 8 cups vegetable broth
  • 1 cup green lentils or brown
  • 1 cup split peas
  • 2 teaspoons ground cumin
  • 1 cup light coconut milk
  • salt and pepper to taste
  • cilantro fresh chopped, for garnish
  • coconut flakes for garnish

Instructions

  • Add all ingredients to the slow cooker, except for the coconut milk. Cook over low heat 6-8 hours until lentils and peas are soft. Stir in the coconut milk, and continue cooking until reheated through.
  • Serve topped with coconut flakes and chopped cilantro.
