Peanut Sauce
1/2cuppeanut butternatural, creamy or crunchy
1tablespoonhoney
2tablespoonslite soy sauceoptional tamari
2teaspoonsgingerfreshly grated
2tablespoonslime juicefreshly squeezed
1garlic cloveminced
1/2teaspoonred pepper flakes
1/4cupwater
Instructions
Whisk together soy sauce, sesame oil, honey, vinegar, garlic, minced ginger, and red pepper flakes. Place chicken strips in the marinade, cover, refrigerate, and let sit overnight or at least 5 hours.
Peanut Sauce
Add all ingredients to a food processor or blender and pulse until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover, and refrigerate until ready to serve.
Assemble, Cook, and Serve
Thread skewers with marinated chicken strips and refrigerate while heating the remaining marinade. Pour the remaining marinade into a small saucepan, bring to a boil, reduce heat and simmer until thickened.
Lightly oil grates of the grill, grill pan, or skillet with canola or coconut oil, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.
