Ingredients

  • 1 1/2 pounds boneless and skinless chicken breasts about 4 fillets, cut lengthwise into 12 strips
  • 1/2 cup lite soy sauce optional tamari
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1 teaspoon balsamic vinegar
  • 2 garlic cloves minced
  • 2 teaspoons ginger freshly grated
  • 2 teaspoons red pepper flakes

Peanut Sauce

  • 1/2 cup peanut butter natural, creamy or crunchy
  • 1 tablespoon honey
  • 2 tablespoons lite soy sauce optional tamari
  • 2 teaspoons ginger freshly grated
  • 2 tablespoons lime juice freshly squeezed
  • 1 garlic clove minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup water

Instructions

  • Whisk together soy sauce, sesame oil, honey, vinegar, garlic, minced ginger, and red pepper flakes. Place chicken strips in the marinade, cover, refrigerate, and let sit overnight or at least 5 hours.

Peanut Sauce

  • Add all ingredients to a food processor or blender and pulse until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover, and refrigerate until ready to serve.

Assemble, Cook, and Serve

  • Thread skewers with marinated chicken strips and refrigerate while heating the remaining marinade. Pour the remaining marinade into a small saucepan, bring to a boil, reduce heat and simmer until thickened.
  • Lightly oil grates of the grill, grill pan, or skillet with canola or coconut oil, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.
  • Serve Chicken Skewers with Peanut Sauce. Enjoy!
