  • 1 1/2 pounds chicken breast fillets (about 4 fillets) cut lengthwise into 12 strips
  • 1/2 cup lite soy sauce, optional Tamari
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated ginger
  • 2 teaspoons red pepper flakes
    Peanut Sauce
  • 1/2 cup natural peanut butter, creamy or crunchy
  • 1 tablespoon honey
  • 2 tablespoons lite soy sauce, optional Tamari
  • 2 teaspoons freshly grated ginger
  • 2 tablespoons freshly squeezed lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup water
  • 12 small (6 inch) skewers


  1. Whisk together soy sauce, sesame oil, honey, vinegar, garlic, minced ginger, and red pepper flakes. Place chicken strips in marinade, cover, refrigerate, and let sit overnight or at least 5 hours.
  2. Peanut Sauce: Add all ingredients to a food processor or blender and pluse until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover and refrigerate until ready to serve.
  3. Thread skewers with marinated chicken strips and refrigerate while heating the remaining marinate. Pour the remaining marinate into a small sauce pan, bring to a boil, reduce heat and simmer until thickened.
  4. Lightly oil grates of grill, grill pan, or skillet with canola or coconut oil, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.
  5. Serve Chicken Skewers with Peanut Sauce. Enjoy!
