Oatmeal White Chocolate Cranberry Cookie

Ingredients

  • 1 cup butter softened to room temperature
  • 1 cup dark brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups old-fashioned oats
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups dried cranberries
  • 1 1/2 cups white chocolate chips
  • 3/4 cup diced walnuts or pecans, optional

Instructions

  • Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.
  • Using a mixer, beat softened butter with brown sugar until light and creamy. Add eggs, one at a time and mix to combine with butter mixture. Add in vanilla and mix to combine.
  • In a separate mixing bowl, add oats, flour, salt, and baking soda. Stir to combine.
  • In a few stages, combine wet and dry mixture and beat after each addition.
  • Stir in the remaining ingredients, combine using a large spoon.
  • Drop a spoonful of dough onto the parchment paper. Flatten each cookie and form into a circle.
  • Bake approximately 14-16 minutes or until golden brown on the bottom. Allow to cool for 2 minutes on the cookie sheet before transferring to a wire rack for complete cooling. Store in an airtight container. Enjoy!

Notes

Tip: Dark brown sugar makes for a chewier cookie than light brown sugar.
The size of the cookie will depend on how large your spoonful is when placing on the parchment paper.
These cookies can be frozen but should not be refrigerated. Refrigerating will dry out the cookies.
