Ingredients

  • 2 pounds brussels sprouts trimmed and halved
  • 1/2 cup dried cranberries or craisins
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/4 cup pine nuts lightly toasted

Instructions

  • Add brussels sprouts and cranberries to the slow cooker. Pour over the olive oil and balsamic vinegar, then add the salt and pepper. Cook on low for 3 to 4 hours, or high for 1 to 2 hours.
  • Toss with toasted pine nuts and serve!
