Ingredients

  • 16 ounces dried split peas
  • 2 cups ham diced, I used Boar's Head Brand, which doesn't have nitrates or preservatives
  • 3 carrots peeled and diced
  • 1/2 cup onion chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 2 teaspoons kosher or sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 quart vegetable stock low-sodium
  • 2 cups water

Instructions

  • Layer the ingredients in your slow cooker in the order listed above.
  • Slowly pour in the vegetable stock and water.
  • Cover and cook soup on low for 5 hours.
  • (If you the soup is a little too lumpy for your liking, gently mash out the peas with the back of your spoon)
