The combination of jalapenos, cream cheese, and bacon is out of this world! If you’re a fan of the jalapeno popper, you will love this Jalapeno Popper Casserole! We’ve taken all the fabulous flavors and textures of a jalapeno popper and reworked it into a casserole. We added cauliflower to keep it low-carb, chicken breasts for protein, and used low-fat cheeses and turkey bacon. If you want to keep it meat-free, however, just omit the chicken breasts and turkey bacon and double the cauliflower for a tasty vegetarian meal.

Jalapeno Popper Casserole

This casserole is fun, spicy, and super delicious so eat up and enjoy.

Ingredients

  • 1 pound cauliflower cut into 1/2 inch pieces
  • 8 ounces cream cheese low-fat
  • 1/2 cup Greek yogurt low-fat
  • 1/2 cup sour cream low-fat
  • 1/2 cup cheddar cheese low-fat, shredded
  • 1/2 pound turkey bacon cooked and crumbled
  • 1/2 cup jalapeno peppers seeded and diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 pound boneless and skinless chicken breasts cooked and shredded

For the Topping

  • 1/4 cup cheddar cheese low-fat, shredded
  • 1/2 pound turkey bacon cooked and crumbled
  • 1 jalapeno thinly sliced into rounds

Instructions

  • Preheat oven to 400 degrees and place cauliflower on a large baking sheet. Drizzle cauliflower florets with oil and roast about 20 minutes, or until tender. Transfer to a colander and drain as much liquid as possible.
  • Combine the next 8 ingredients in a large bowl and use a hand mixer to mix until smooth.
  • Add in the cauliflower and chicken and mix with a spoon until all ingredients are well incorporated.
  • Taste the mixture for seasoning and transfer to a 2-qt casserole dish that has been lightly sprayed with cooking spray.
  • Top with the shredded cheddar, turkey bacon, and sliced jalapenos and bake for 25-30 minutes, or until bubbly.
