Southwest Grilled Chicken with Corn and Bean Relish
Ingredients
Chicken
- 4 boneless and skinless chicken breasts
- 1/4 cup olive oil
- 2 limes juiced
- 1 garlic cloves minced
- 1 teaspoon honey
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
Relish
- 1/2 cup black beans cooked
- 1 tomato small, diced
- 1/2 red onion small, diced
- 1/2 cup corn kernels
- 2 tablespoons cilantro fresh, chopped
- 1 teaspoon ground cumin
- 1 teaspoon sugar unrefined
- 1 teaspoon white vinegar
Instructions
- Combine the chicken with the rest of the ingredients in a covered casserole dish or plastic bag and marinate in the refrigerator for 1 hour or overnight.
- Make the relish by combining the ingredients in a large bowl. Refrigerate until ready to serve to let the flavors meld.
- When you’re ready to eat, preheat grill to medium-high heat. Remove the relish from the refrigerator so it can come to room temperature while you’re grilling the chicken.
- Grill the chicken until done. Allow to rest for about 5 minutes. Top with the relish.
