  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup cooked black beans
  • 1 small tomato, diced
  • 1/2 small red onion, dice
  • 1/2 cup corn kernels
  • 2 tablespoons fresh chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon (unrefined) sugar
  • 1 teaspoon white vinegar


  1. Combine the chicken with the rest of the ingredients in a covered casserole dish or plastic bag and marinate in the refrigerator for 1 hour or overnight.
  2. Make the relish by combining the ingredients in a large bowl. Refrigerate until ready to serve to let the flavors meld.
  3. When you’re ready to eat, preheat grill to medium high heat. Remove the relish from the refrigerator so it can come to room temperature while you’re grilling the chicken.
  4. Grill the chicken until done. Allow to rest for about 5 minutes. Top with the relish.
