Whole Wheat Bread vs. White Bread

Have you ever wondered about the difference between whole wheat bread and white bread? It’s all in the flour. The following video discusses the differences:

Both wheat and white flour are created from the wheat plant, but wheat flour uses all of the parts of the wheat plant whereas white flour does not. The additional processing steps added in creating white flour makes the flour sweeter and easier to digest, but this additional processing also has the following negative effects:

  • Helpful vitamins from the wheat plant are removed
  • Fiber in the wheat plant is removed
  • Bleach is used to give the flour it’s vibrant white color

Another topic that the video discusses is if white bread is the same as French and sourdough bread. The short answer is yes, but there can be levels in the processing of the white flours. Some bakeries may use white flour that hasn’t been bleached or is using more minimally processed white flour.
