Fresh and light, this sweet treat will hit the spot! These fresh fruit cookie sandwiches feature freshly sliced fruit with a dollop of whipped cream stacked between 2 buttery shortbread cookies. This recipe will be an amazing dessert to bring to your next tea party, baby shower, bridal shower, summer fling, or as a gift to your sweetest friend.

Simple Elegant Dessert

Although this recipe has a couple of steps, it really is just too simple to mess up. The shortbread cookies are made with only four ingredients and don’t need too much attention. Once those are cooked and cooled, all you need to do is top them with a dollop of whipped cream and fruit! So simple yet very elegant and fancy. Perfect for a quaint springtime tea or big summer bash, this dessert will always impress!

For our recipe, we used sliced strawberries, kiwi, and pineapple. However, you can swap in any fruit that you like or just have on hand. For small round fruits like grapes or blueberries, we suggest slicing them in half so they don’t escape your cookie sandwich. Make These Cookie Sandwiches in 1, 2, 3!

Sweet shortbread, creamy cool whip, and tart fruit make this dessert a real winner.

Start by making the shortbread cookies. Heat the oven to 350 degrees and let your butter soften if it has been in the fridge. Pro tip: don’t microwave your butter. Instead, fill a large glass with hot water and then empty. Flip the warm, empty cup over your stick of butter and let it sit. The heat from the glass will soften the butter quickly without melting it.

Once softened, beat the butter, powdered sugar, and vanilla extract together with a spoon. Then, stir in the all-purpose flour. Once just combined, roll out the dough on a floured surface. Once it is in a ½-inch thick sheet, use a cookie cutter to create an even number of cookies. Place the cookies on an ungreased cookie sheet, then bake them for about 15 minutes, or until set. The bottoms should be a light golden brown. Immediately remove them from the cookie sheet to a wire rack. Cool the cookies completely before layering, about 30 minutes.

Once cooled, flip half of the cookies over. Spread a small dollop of cool whip on each, then lay sliced fruit over top. Add another dollop of cool whip and top with another shortbread cookie. Like we said, so delicious and so elegant!

Ingredients

Shortbread Cookies

  • 1 cup butter softened
  • 3/4 cup powder sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 cups whole wheat pastry flour

Sandwich Filling

  • 1/2 cup cool whip
  • 2 cups fruit, sliced berries, melon, kiwi, pineapple, etc

Instructions

  • Heat the oven to 350 degrees.
  • Beat the butter, powdered sugar, and vanilla extract together with a spoon. Then, stir in the flour.
  • Once just combined, roll out the dough on a floured surface. Once it is in a ½ inch thick sheet, use a cookie cutter to create an even number of cookies.
  • Place the cookies on an ungreased cookie sheet, then bake for about 15 minutes or until set and bottoms are light golden brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • Once cooled, flip half of the cookies over. Spread a small dollop of cool whip on each, then lay sliced fruit over top. Add another dollop of cool whip and top with another shortbread cookie.
