Italian Sausage Kale Soup
Ingredients
- 1 tablespoon olive oil
- 1 yellow onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 garlic cloves minced
- 1 pound Italian turkey sausage
- 28 ounces tomatoes diced, canned
- 1 tablespoon Italian seasoning
- 6 cups chicken broth
- 2 teaspoons red chili flakes (optional)
- 15 ounces cannellini beans canned, drained and rinsed
- 1 pound kale stem removed, roughly chopped
Instructions
- Heat olive oil in a large soup pot over medium-high heat. Crumble sausage into pot and brown. Remove from pot and set aside.
- Saute onions, carrots and celery for 5 minutes, until fragrant. Add garlic and saute another minute. Return sausage to pan, add tomatoes with liquid, Italian seasoning, broth and chili flakes.
- Bring to a boil, reduce heat and simmer for 20 minutes, until vegetables are soft. Add cannellini beans and kale, simmer another 5-10 minutes. Serve hot.
