Italian Sausage Kale Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 garlic cloves minced
  • 1 pound Italian turkey sausage
  • 28 ounces tomatoes diced, canned
  • 1 tablespoon Italian seasoning
  • 6 cups chicken broth
  • 2 teaspoons red chili flakes (optional)
  • 15 ounces cannellini beans canned, drained and rinsed
  • 1 pound kale stem removed, roughly chopped

Instructions

  • Heat olive oil in a large soup pot over medium-high heat. Crumble sausage into pot and brown. Remove from pot and set aside.
  • Saute onions, carrots and celery for 5 minutes, until fragrant. Add garlic and saute another minute. Return sausage to pan, add tomatoes with liquid, Italian seasoning, broth and chili flakes.
  • Bring to a boil, reduce heat and simmer for 20 minutes, until vegetables are soft. Add cannellini beans and kale, simmer another 5-10 minutes. Serve hot.
