Simple One Pan Lemon Salmon with Roastsed Asparagus
- 1 pound fresh salmon cut into 2 fillets (about 8 ounces each)
- 1 pound asparagus bottoms trimmed
- 1 tablespoon olive oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons garlic powder
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 lemon sliced into circles
- Preheat oven to 400 degrees. Line a baking sheet with foil and spray with non-stick spray.
- Place the salmon filets skin side down on one side of the baking sheet. Spread the asparagus in an even layer next to the salmon.
- Drizzle the olive oil over the salmon and asparagus. Season with the salt, pepper, and garlic powder. Sprinkle the lemon zest over top and drizzle the lemon juice. Last, place the lemon slices over the salmon.
- Bake for about 15 minutes or until salmon is firm but flaky and asparagus begins to lightly brown (it's ok for the asparagus to have a slight crunch). Serve hot.
