Ingredients

  • 1 cup rolled oats
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mashed banana or unsweetened applesauce
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries or any fruit of choice

Instructions

  • Preheat the oven to 350°F (175°C) and line a 6 cup muffin tin with paper liners.
  • In a bowl, combine oats, almond flour, baking powder, and salt.
  • In another bowl, whisk together mashed banana, eggs, honey, and vanilla extract. Stir in the dry ingredients until just combined. Fold in the blueberries.
  • Divide the batter among the muffin cups and bake for 18-20 minutes or until a toothpick comes out clean.
  • Let cool before removing from the pan.
