My boyfriend’s dad is a HUGE fan of a food I never really hear people eating: sardines. That being said, he goes crazy for this low-carb breakfast salad by Eating Bird Food! It calls for just 5 nutritious ingredients:

  • Sea salt and pepper to taste

Let me tell you a little secret: I’m not proud of it, but every Christmas for as long as I can remember, my aunt has made apple pie from scratch. She makes an entire pie just for me. It’s the best Christmas present ever!!!

Omelets are my go-to low-carb breakfasts because they’re so easy, so full of protein, and so fun! You can always add or take out ingredients based on your own personal preference. This is especially great for me since I’m always cooking for two or more. Since they are so easy and since everyone always wants something different, omelets are the perfect breakfast, lunch, and dinner in my book. I can load mine up with veggies and my boyfriend’s up with meat and cheese at the same time!

But, some days, I get lucky and everyone does want the same thing! That usually happens when I bring the idea of making this Baked Denver Omelet by Cooking Classy to the table. We almost never finish our food at my house, so leftovers are always the name of the game. Luckily, this baked omelet is great for refrigerating for later in the week.

27. Jumbo Chickpea Pancake

A jumbo pancake?! Heck yes, I’m in!

This vegan pancake recipe by Oh She Glows does not put its name to shame. It is definitely jumbo, definitely filling, and definitely low in carbs. How? Well, that’s where the chickpeas come in! They’re so high in protein and so low in carbohydrates, making chickpea flour a great pancake ingredient, here.

They come out the size of your skillet (I know, it’s amazing), and can really be topped with whatever you want! I topped mine with our Avocado Hummus and Spicy Mango Salsa, and it was a magical low-carb breakfast, to say the least.
