Marinated Tomato Salad

Add a little brightness to your meal with this fresh tomato salad loaded with nutrients and flavor!

Ingredients

  • 6 tomatoes medium, diced
  • 1/2 cup green scallions chopped
  • 1/2 cup green bell peppers chopped, optional
  • 1/2 cup onion chopped
  • 1 tablespoon honey
  • 2 tablespoons vinegar

Instructions

  • Combine vegetables; sprinkle with honey and salt and pepper to taste. Add vinegar and stir.
  • Allow to sit 2 hours in the fridge before serving.
