Ingredients

  • 3/4 cup honey
  • 1/4 cup coconut oil
  • 1 tablespoon pure vanilla extract
  • 4 cups finely shredded unsweetened coconut
  • 2/3 cup unsweetened cocoa powder

Instructions

  1. Combine the honey and coconut oil in a saucepan on the stove. Heat over low heat until melted.
  2. Stir in the vanilla, coconut, and cocoa powder until well combined.
  3. Line a baking sheet with parchment paper. Using a cookie scoop, scoop the dough onto the pan. Freeze for about 20 minutes until firm and store in an airtight container.

      We haven’t tried freezing these yet, Shannon, but don’t see any reason why they wouldn’t freeze well. Keep us posted if you give it a try. 🙂
