Open Faced Mediterranean Lamb Burger

This savory and juicy burger is made with clean and fresh ingredients that will keep your mind off your midsection and on your food where it belongs.

Ingredients

Burger

  • 1 1/2 pounds lamb ground
  • 1 tablespoon garlic minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 tablespoon mint fresh, minced
  • 1 tablespoon parsley fresh, minced
  • 1 package whole-wheat pita rounds

Sauce

  • 2 cups Greek yogurt
  • 2/3 cup cucumber peeled, seeded, and diced
  • 1/4 cup pistachios chopped
  • 1 tablespoon cilantro fresh, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper ground, cayenne

Toppings

  • 1 cucumber thinly sliced
  • 1/4 cup pistachios chopped

Instructions

  • Combine lamb, garlic, cumin, coriander, pepper, salt, mint and parsley. Shape mixture into 4 patties. Grill patties over med-high heat, for 6 minutes per side, or until internal temperature reaches the desired temperature. Medium-Rare 145 F; Medium 160 F; Well-Done 170 F
  • To make sauce: Combine yogurt, diced cucumber, 1⁄4 c pistachios, cilantro, salt, and red pepper.
  • Cover and chill up to 2 days. Spread the desired amount of cucumber sauce over pitas. Top with lamb patty. Garnish with sliced cucumber and remaining 1⁄4 c chopped pistachios.
