Ingredients

  • 2 zucchini, sliced into 1/4-inch rounds
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 4-5 basil leaves, sliced

Instructions

  1. Preheat oven to broil.
  2. Lay zucchini slices on a non-stick baking sheet or large skillet.
  3. Sprinkle with the Parmesan, salt, and pepper. Broil until cheese is golden and zucchini is soft, about 4-5 minutes. Be sure to keep a close watch on zucchini.
