Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 medium sliced green bell peppers
  • 1 medium thinly sliced sweet onion
  • 1/2 small eggplant, sliced
  • 1/2 teaspoon kosher or sea salt
  • 2 tablespoons grated parmesan cheese
  • 2 pieces whole-grain tortillas
  • 2 dashes hot sauce

Directions

In a medium skillet, heat olive oil over medium-low and add peppers, onions, and eggplant. Sauté about 10 minutes, or until browned.
