Oven Baked Chicken and Sweet Potato Fries
Ingredients
For Baked Chicken
- 4 boneless and skinless chicken breasts
- 1 cup whole-wheat panko breadcrumbs
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 egg lightly beaten
- 1 tablespoon extra virgin olive oil
- 1 garlic clove minced
For the Sweet Potato Fries
- 2 sweet potatoes large, peeled and sliced into thin french fry strips
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cayenne pepper to taste
- 1 teaspoon lime juice
Instructions
- Preheat oven to 350 degrees.
For the Chicken
- Rinse chicken in cool water and pat dry with a paper towel.
- In a small bowl, combine panko, paprika, salt, and pepper. Dip chicken into egg mix followed by the panko mix. Press the panko into the chicken. Place on a cookie sheet lightly sprayed with nonstick spray. Repeat with remaining chicken breast. If there is any panko mix remaining, divide evenly between chicken and press on to the top of each breast.
- In a separate bowl combine olive oil and garlic. Set aside.
- Bake for 15 to 20 minutes until internal temperature reaches 165. Drizzle with olive oil and garlic mix.
For the Sweet Potato Fries
- Combine all ingredients and toss to coat all fries with spices. Spread onto a cookie sheet in one even layer. Bake for 15 minutes and turn fries over. Bake an additional 10 to 15 minutes or until fries just begin to brown. Serve alongside chicken.
