Begin by heating about a tablespoon of olive oil in a large pot over medium heat. Add in the yellow onion, garlic, carrots, celery, green bell pepper, and zucchini. Saute this veggie mixture for three minutes. Next, add the spicy Italian sausage, Italian herbs, and red chili flakes to the pot and cook for approximately five minutes, breaking up the sausage as you stir. Once you add in the diced tomatoes, black pepper, chicken broth, russet potatoes, and kale, bring the soup to a simmer for around 15 minutes. When the potatoes are tender, you’ll know it’s ready to eat!

30-Minute Spicy Sausage Soup
- 1 tablespoon olive oil
- 1 yellow onion diced
- 3 garlic cloves minced
- 1 cup carrots diced
- 1/2 cup celery diced
- 1 green bell pepper diced

- 1 pound spicy Italian sausage
- 1 teaspoon mixed Italian herbs
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon ground black pepper
- 13.5 ounces canned diced tomatoes
- 5 cups low sodium chicken broth
- 1 pound russet potatoes peeled and cut into 1/2" cubes
- 4 cups kale chopped
- Heat olive oil in a large pot over medium heat
- Add onion, garlic, carrots, celery, green bell pepper, and zucchini and saute for 3 minutes
- Add sausage and seasoning and cook for about 5 minutes, breaking up the sausage as you stir
- Add diced tomatoes, black pepper, chicken broth, potatoes, and kale
