  • 1¼ cups White Whole Wheat Flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups thinly diced apple pieces (Fuji or Gala are good choices)
  • ½ cup canola oil
  • ½ cup honey
1 egg, slightly beaten
  • 1 teaspoon vanilla

  • ½ cup diced pecans
  • Streusel
  • 2 tablespoons White Whole Wheat flour
¼ cup old-fashioned oats

  • ¼ cup finely diced pecans

  • 1 teaspoon cinnamon

  • 1 tablespoon honey

  1. Preheat oven to 325 degrees.
  2. In a small bowl combine streusel ingredients, set aside.
  3. Whisk together ingredients in a small mixing bowl. In a large mixing bowl add canola oil, honey, egg and vanilla, beat on medium speed until ingredients are well combined, about two minutes.
  4. Add apples to dry ingredients, stir until combined. Add apples and dry ingredients to wet ingredients, stir to combine.
  5. Lightly oil an 8” round cake pan or 8” x 8” square cake pan. Pour batter into pan, evenly sprinkle streusel over cake batter. Loosely cover with foil after 30 minutes of baking to prevent streusel from browning too quickly. Bake 45-50 minutes or until edges begin to brown and pull away from side of pan.
  6. Allow to cool before serving.

Looks like a good recipe. Have you ever tried replacing the oil with no sugar added applesauce? May be able to use even less honey then because of the applesauce's sweetness. I may try it. Thanks for the recipe!

Tammy, I haven't but would love to hear your tweaks and how it turns out. 🙂

    I am allergic to nuts.
Can i omit them from the cake without any problem?
Are there any good alternatives for the topping to help make it crunchy and delicious?

Heather, You could make a nut-free granola and use it as an alternative to the crunchy nut topping.

Tastes amazing!! But a dry, crumbly mess. Hoping it will soak up moisture from apples & be a little more moist tomorrow. Any thoughts?
