A delicious streusel cake made the healthy way.
Clean eating streusel cake? Why not? When you think of streusel topping, you likely think of mounds of butter and sugar. We’ve replaced all of that with honey and healthy ingredients like pecans and oats to give you that sweet, crunchy topping without the fat and refined sugar. We use whole wheat flour to add fiber to our cake, along with canola oil, which has one of a low saturated fat count. This apple cinnamon streusel cake is a great way to keep dessert time healthy.

Apple Cinnamon Streusel Cake
Ingredients
- 1 1/4 cups white whole-wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups apple pieces thinly diced (Fuji or Gala are good choices)
- 1/2 cup canola oil
- 1/2 cup honey
- 1 egg slightly beaten
- 1 teaspoon vanilla
- 1/2 pecans diced
Streusel
- 2 tablespoons white whole-wheat flour
- 1/4 cup old-fashioned oats
- 1/4 cup pecans finely diced
- 1 teaspoon cinnamon
- 1 tablespoon honey
Instructions
- Preheat oven to 325 degrees.
- In a small bowl combine streusel ingredients, set aside.
- Whisk together ingredients in a small mixing bowl. In a large mixing bowl add canola oil, honey, egg, and vanilla, beat on medium speed until ingredients are well combined, about two minutes.
- Add apples to dry ingredients, stir until combined. Add apples and dry ingredients to wet ingredients, stir to combine.
- Lightly oil an 8” round cake pan or 8” x 8” square cake pan. Pour batter into the pan, evenly sprinkle streusel over cake batter. Loosely cover with foil after 30 minutes of baking to prevent streusel from browning too quickly. Bake 45-50 minutes or until edges begin to brown and pull away from the side of the pan.
- Allow to cool before serving.

Looks like a good recipe. Have you ever tried replacing the oil with no sugar added applesauce? May be able to use even less honey then because of the applesauce's sweetness. I may try it. Thanks for the recipe!

Heather, You could make a nut-free granola and use it as an alternative to the crunchy nut topping.
Tastes amazing!! But a dry, crumbly mess. Hoping it will soak up moisture from apples & be a little more moist tomorrow. Any thoughts?
