The Powerful Plant-Based Substitute
Jackfruit is a big and bumpy tropical fruit originating from Southern India and Malaysia. Jackfruit contains many beneficial compounds including high levels of vitamin C and vitamin B, as well as folate, potassium, and magnesium. These compounds can support immune, digestive, and blood health. Because of its stringy texture, this unique fruit is the perfect pulled pork substitute. The BBQ sauce for this recipe is made with super clean and healthy ingredients, including lycopene-rich tomato puree, metabolism-boosting apple cider vinegar, and anti-inflammatory pineapple juice. Quick Cook or Slow Cook(er) this Vegan Dish
The recipe we’ve written takes a quick and easy route towards a delicious dish. It is made on the stove and is ready in about 20 minutes! However, if you want to pop this dish in the slow cooker so it will be ready when you come home or stays warm throughout a party, be our guest! For this method, combine the BBQ sauce ingredients, and join it with the onion, garlic, and jackfruit in the slow cooker. Cook on high for 3 to 4 hours or low for 5 to 6 hours. Just make sure you sauté the onion and garlic first to soften them and really enhance their flavors.
How to make our Clean Jackfruit BBQ
This recipe is quick and easy to prepare, making it perfect for a busy day, on-the-go lunch, or a family gathering!
First, combine the tomato paste, pureed tomato, molasses, apple cider vinegar, Dijon mustard, fresh pineapple juice, and nutritional yeast in a medium bowl to make the BBQ sauce. Next, heat olive oil on medium-high heat in a medium pot. Add the onion and garlic and sauté for about 3 minutes. Then, pour in the BBQ sauce and reduce to a simmer for 5 minutes. After it has simmered and thickened a little, add the jackfruit and simmer for 10 more minutes. Serve on a sandwich bun or wrap and enjoy!
Clean BBQ Jackfruit
Ingredients
- 26 ounces canned jack fruit drained, rinsed, and pulled into strips with a fork
- 1 tablespoon olive oil
- 1 yellow onion thinly diced
- 3 garlic cloves
Clean BBQ Sauce
- 2 ounces tomato paste canned
- 1/2 cup pureed tomato canned
- 1 tablespoon molasses
- 1 tablespoon apple cider vinegar
- 3 tablespoons Dijon mustard
- 1/4 cup fresh pineapple juice
- 3 tablespoons nutritional yeast
Instructions
- Combine BBQ sauce ingredients in a medium bowl
- In a pot, heat olive oil on medium-high heat
- Sauté onion and garlic for about 3 minutes
- Add sauce and reduce to a simmer for 5 minutes
- Add jackfruit and simmer 10 more minutes
- Serve on a sandwich bun or wrap
