Cozy and Satisfying Moroccan Lentil Soup
Ingredients
- 1 tablespoon olive oil
- 1 onion small, diced
- 2 garlic cloves minced
- 1 sweet potato diced
- 2 cups green lentils rinsed
- 2 teaspoons ground cumin
- 1/2 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- 6 cups vegetable broth
- 1 tablespoon cilantro chopped
Instructions
- In a medium soup pot, heat olive oil. Once hot, add the onion and saute for 2 to 3 minutes or until softened. Add the garlic and sweet potato, cook for another 5 minutes or until just begin to soften.
- Stir in lentils, cumin, cardamom, cinnamon, turmeric, salt, pepper, and cloves. Stir until the mixture become very fragrant, about 1 minute.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until lentils and potatoes are tender.
- Ladle into bowls and sprinkle with fresh cilantro.

Question…Why is the Sodium: 996mg when there is only 1/2t kosher salt added to this recipe? I want to make this but am worried about the sodium.
It is actually 145 mg sodium per 1 cup serving size. It’s now corrected. 🙂
