A Healthy Vegan Alternative

This tasty, vegan-friendly recipe gets a healthy boost by combining fresh veggies like carrots, cabbage, bell pepper, and green onion with zesty ginger and fragrant garlic. You’ll be cooking this delicious, crunchy mixture in a small amount of sesame oil, which keeps the fat content down while boosting the nutrient density. Combining this antioxidant-rich bunch with a protein-filled peanut sauce and vitamin C-rich limes, vegans and non-vegans alike will be sure to hit their health goals with this dish.

Crispy Noodles Ready in Minutes!

First, you’ll need to cook the ramen noodles according to the package ingredients, then set them aside. Meanwhile, combine the peanut sauce ingredients in a medium bowl and set that aside as well. Once that is finished, heat the sesame oil in a large pan or wok over medium-high heat. Add the noodles and cook for about 8 minutes or until crispy and slightly browned, tossing occasionally. You may find that leaving the noodles to sit in an even layer for a minute or two at a time helps get an even crispier texture.

Remove the noodles from the pan and toss the carrots, bell pepper, and cabbage into the pan, using the oils from the noodles to cook them. Sauté the veggies for 4 minutes or until softened, then add the noodles back in as well as the peanut sauce. Toss everything together and warm for about 1 minute, before removing the pan from the heat. Top with peanuts, green onion, and sesame seeds, serve with a lime wedge, and enjoy!

These yummy noodles are a great and healthy alternative to Chinese take-out!

Ingredients

  • 8 ounces ramen noodles
  • 1 tablespoon sesame oil
  • 2 cups carrots grated
  • 2 bell peppers one red, one green
  • 2 cups red cabbage shredded
  • 1/4 cup peanuts chopped
  • 1/4 cup green onion chopped
  • 2 tablespoons sesame seeds
  • 1 lime cut into wedges

Peanut Sauce

  • 3 tablespoons natural peanut butter creamy
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 lime juiced and zested
  • 1 garlic clove minced
  • 1 tablespoon maple syrup
  • 1/4 teaspoon red chili flakes
  • 1/2 teaspoon ground ginger

Instructions

  • Cook noodles according to package ingredients, then set aside.
  • Meanwhile, combine the peanut sauce ingredients in a bowl.
  • Heat sesame oil in a large pan or wok over medium-high heat.
  • Add the noodles cook for about 8 minutes or until crispy and slightly browned, tossing occasionally.
