After many years, I have finally discovered the key to enjoying Brussels sprouts. The secret? Don’t cook or serve them whole.

It’s really as simple as that. Brussels sprouts have a bad reputation for being bitter, and for awhile I wasn’t totally sold on them myself. However, when you cook and serve these cruciferous veggies halved, sliced, or chopped thin, it really makes a world of difference. Preparing Brussels sprouts this way helps them fully absorb the flavors you’re cooking with, leaving them tasty all the way through.

Trust me, this crunchy kale and Brussels sprout salad with creamy Dijon dressing definitely has plenty to offer in both of those departments. But before we even get there, this salad starts mixing things up at the base.

This tasty salad swaps out traditional lettuce for superfood kale. And while kale salad is probably nothing new, adding shaved Brussels sprouts to the mix is a salad power move you may not have tried yet.

Shaved Brussels sprouts add subtle flavor and crunch to this salad. Meanwhile, adding these cruciferous veggies to the mix also adds tons of nutrients. These veggies boast high levels of vitamins K and C as well as high fiber content and detox and anti-inflammatory support. Paired with superfood kale, this healthy salad really kicks things up a notch.

I like a salad that offers lots of different textures and flavors. This salad gets some of its crunchy texture from the shaved Brussels sprouts, but chopped Gala apples pack tons of extra crunch and flavor.

Earthy and sweet chopped pecans pair with apple for a tasty, textured salad perfect for summer. Red onion and toasted sesame seeds round out the ingredients packed into this full and flavorful salad, but the flavor doesn’t stop there.

A sweet and savory honey Dijon dressing really brings this salad together. Lemon juice, garlic, honey, and Dijon combine for a flavorful dressing. Meanwhile, a Greek yogurt base means this dressing is rich and creamy.

Ingredients

For the Dressing

  • 1 tablespoon lemon juice
  • 2 tablespoons dijon mustard
  • 1/4 cup Greek yogurt plain
  • 1 teaspoon honey
  • 2 garlic cloves minced
  • 1/4 teaspoon kosher salt

For the Salad

  • 3 cups kale stems removed and lightly chopped
  • 2 cups Brussels sprouts shaved thin
  • 1/4 cup red onion sliced thin
  • 1/4 cup toasted sesame seeds
  • 1 gala apple chopped
  • 1/4 cup pecans roughly chopped

Instructions

For the Dressing

  • Combine all ingredients and whisk until smooth. Set aside for 10 minutes before using.

For the Salad

  • Toss together the kale and Brussels sprouts and divide into serving bowls. Top with remaining ingredients and drizzle with the dressing. Serve and enjoy!
